Coconut-Infused Rum
INGREDIENTS
- 3 cups freshly grated coconut
- One 750ml bottle good quality light rum
INSTRUCTIONS
Place the coconut in a large glass container, and the rum, and cap tightly. Let stand at room temperature for 3 weeks, shaking gently every couple of days. Taste for the preferred flavor intensity, infusing for another week if it needs more time. Strain the mixture into the original bottle. Cap tightly, label, and refrigerate until ready to serve.
